Healthy Peanut Butter Cookies
This is such a great recipe – you will need to take a little time to rest the batter, but the end result is well worth the wait.
Healthy and delicious, once you’ve tried these cookies, they’ll become a firm favorite!
These quantities should make between 15 – 20 cookies.
Ingredients
- 225g chunky peanut butter
- 2 beaten eggs or 115 egg substitute
- 115ml peanut oil
- 70g brown sugar
- 70g granulated sugar (If you prefer, you can use all brown sugar or all granulated sugar, but I find these quantities give the best results)
- 170g oat bran
- 140g self-raising flour
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
Method
- Mix together the oil, the eggs and the peanut butter in a large bowl until well blended.
- Gradually add the sugar(s) and then mix in the dry ingredients. As this is quite a firm dough, you may find it easier to use your hands for this, rather than a spoon. Or you can use a food mixer.
- Cover the bowl with plastic wrap and put into the refrigerator. Chill the cookie mix for at least 3 hours, but preferably overnight.
- At the end of the chilling time, preheat your oven to 180ºC/350ºF.
- Shape the cookie mix into golf size balls and place them on a non-stick baking try (or on non-stick baking paper). Press them flat with a fork to give a decorative pattern on the top, but take care not to squash them too flat.
- Bake for around 15 minutes or until brown around the edges.
- Remove the cookies from the oven and allow to cook before enjoying with an ice-cold glass of milk!
