Healthy Peanut Butter Cookies
Chances are you will have had these cookies many times before during your childhood, they may have even been an after school favourite.
Healthy peanut butter cookies are easy to make.
If you have a sweet tooth this easy, three ingredient recipe will see you satisfied in next to no time.
All you will need to make these classic cookies is one egg, a cup of peanut butter, and a cup of sugar.
Mix the ingredients in a mixing bowl until smooth
Preheat the oven to 350 degrees.
Scoop the dough into about one inch round balls and place onto a baking sheet.
Once you have the balls laid out on your sheet press down on them with a fork.
Press down from the opposite angle making a criss cross shape on top of the dough.
You are looking for a thickness similar to that of a digestive biscuit or maybe a little thicker. This is personal choice as I like mine quite thin and being a little crispy when cooked.
These cookies will not spread during the cooking process at allat all once you have shaped them with your fork.
You can bake the full recipe on a single tray if you would like. Bake for 12 minutes and then let cool on the tray for 1-2 minutes before removing to a wire rack to finish cooling.
Store any uneaten cookies in an airtight container for later.
If you are anything like me and my family this container need not be too large.
Now you have the basics you can of course always change things up. Try adding a teaspoon of vanilla to the mix for a totally different taste or my favorit a handful of chocolate chips will really get things moving.
Another favorit of mine is to drizzle some icing sugar over the top when they are cool.
